Lentils stew with sweet potato
Recipe (4 servings) ingredients:
- 4 tbs olive oil
- 1 cum green lentils
- 1 tbs cumin powder
- 1 tbs paprika powder
- 2 bay leaves
- 1 onion finely chopped
- 1 garlic clove minced
- 2 medium sized sweet potatoes, peeled and chopped into dice of about 1cm
- 1L vegetable broth
- feta cheese
- 1/4 cup fresh parsley, finely chopped
- salt, pepper
In a large saucepan, heat the olive oil over medium heat. Add the cumin and the paprika powders and toast for about a minute until the color becomes a bit darkened. Add the onion and saute for about 2-3 minutes, until the onion is soft and translucent. Add the minced garlic and stir for another minute.
Add the sweet potatoes and stir for about 1 minute. Season with salt and pepper. Add the rest of the ingredients and increase the fire. Once the vegetable broth starts boiling, decrease the fire to medium and let simmer (uncovered) for about 20-30 minutes, until the lentils become soft.
Serve with feta cheese (if you are not vegan), and drizzle with some freshly chopped parsley.
