Sunday shrimp salad
A very simple, refreshing and vegetarian plate for a lazy Sunday lunch. For those who wake up late and just need to prepare something in no time, but still being delicious and tasty.
Recipe (2 servings) ingredients:
- 400g shrimp, peeled
- 2 medium size avocados, chopped
- 1 onion finely chopped
- 1/4 cup cherry tomatoes, halved
- 100g green salad
- juice of 1 lime
- 1tbs cumin
- 1 tbs paprika
- 1 tbs olive oil
- fresh coriander
- salt, pepper
In a bowl, mix the cumin, paprika, together with the olive oil and the lime juice. Place the shrimp and let it marinate for about 15 minutes (if you have more time, let it marinate even longer). Place the shrimp into a skillet and cook for about 5 minutes (each side). In a salad plate, combine the green salad, cherry tomatoes, avocado and onion. Put the shrimp on the top together with some coriander leaves, and drizzle with some fresh lime juice and olive oil.
