Energy homemade bars
It is already 2017 and we all have busy lives. Time is precious and sometimes we do not even have the time to cook a proper meal to replenish our bodies. We often do not have the strength to get out of bed to prepare breakfast, or we are craving for a snack after spending the entire day in front of the computer writing mails. Moreover, for those who find the time to hit the gym after work, a healthy snack is a must to allow our muscles to repair themselves.
We need to make sure that our bodies are fueled correctly and work on their optimal level. Consuming the perfect workout snack as soon as we finishing our workout ensures that all the essential food ingredients are used efficiently.
What better than preparing your own energy bars to pack and take with you at the office or even better to consume right after an intense workout.
Recipe for approximately 4 bars:
- 2 cups rolled oats
- 1/2 cup dark chocolate chips
- 1/2 cup chia seeds
- 1/4 cup raisins
- 1 cup organic peanut butter
- 1/4 cup honey
- 1/2 cup coconut milk
- 1/2 cup whey protein (optional for protein source)
Blend the rolled oats in a blender until a flour-like consistency is obtained. Place the blended oats in a large bowl and add the chocolate chips, the chia seeds, the raisins and the whey powder. Mix well and add 1/4 cup of the coconut milk. Add the honey and the peanut butter. Mix well until a thick consistency is acquired. if the texture is still too dry, keep adding the rest of the coconut milk slowly while mixing, until good consistency.
Spread the mixture into a baking pan (of about 20 x 20 cm). Press the mixture down and cover the pan with a cellophane wrap. Let in the fridge over night until the mixture hardens. Slice into bars (approximately 12-14) and keep them stored in the refrigerator.
